Sweet Cabbage Soup

I make this soup when I feel I’m lacking in vegetables, like after a big holiday weekend. Because the vegetables are gently simmered, their natural sweetness comes out instead of being a bitter soup. Also cabbage is a good source of fiber, vitamin C, and vitamin K and helps regulate hormones.


2 cups onions, small dice

1 cup carrots, small dice

1 cup celery, small dice

2 large cloves of garlic, finely minced

1 large turnip, large dice

1/2 head cabbage, large dice

1 quart vegetable stock

fresh parsley

fresh squeeze of lemon


  1. Sauté onions in olive oil until translucent.

  2. Add carrot, celery and turnip and sauté until slightly softened.

  3. Add garlic and cook until aromatic.

  4. Add the cabbage and the vegetable stock.

  5. Bring to a boil and cook for 30 mins.

  6. Top with fresh parsley and lemon.
