French Toast with Almond Butter and Fresh Strawberries
Adding almond butter to the classic French toast makes the dish a little more balanced. The fiber from the strawberries and the fat/protein from the almond butter make this dish little more balanced instead being a sugar overload.
3-4 slices of bread with a crunchy crust (for however many people you are serving
2 eggs lightly beaten
dash of Brandy
1/2 teaspoon cinnamon
1/4 cup almond milk, oat milk or cow’s milk
Drizzle of Almond butter
Drizzle of Grade A Maple Syrup
1 cup fresh strawberries, quartered
5 mint leaves, chiffonade (finely sliced into strips)
Combine the egg, Brandy, cinnamon, milk of choice.
Heat 1 teaspoon of butter with a 1 teaspoon of neutral oil like avocado oil over medium-low heat.
Dip one slice at a time into the egg mixture and coat both sides.
Once the butter starts to foam place the slice in the pan. Cook on both sides until crispy and the egg mixture is set. You can cook two slices at a time in a medium pan.
Place slices on a plate. Drizzle with warmed maple syrup and almond butter Top with fresh strawberries and mint.
